August: The Festival of the ''Strascinati''
The origin of the ''strascinati'' goes back to the Middle
ages. It's a dish handed down in its traditional, practically
unchanged recipe. Lean lard, fresh sausages, eggs and pecorino cheese, mixed
and thickened, are still today the basic ingredients for this local dish, protagonist
of the festival of Monteleone di Spoleto.
