It was born in 2002 at Montefalco the National Center of Passito Wines, with the purpose to catalogue, to describe and to spread the culture
of the passito wines in Italy. It's a typology of particular wines, from
the difficult production and understanding. They have been recently discovered
and slowly are trying to get out from the niche market. The passito wines
constitute a precious point of view to understand the reality of vine of the
territory of which they are expression, deriving often from autochthonous
vines, and of different techniques of withering. One of the projects realised
by the Centre have been the publication of the first Atlas of the Italian
Passito Wines, a precious list of all the sweet and strong sweet wines of
the peninsula. The passito wines are probably destined to be confined into a
small segment of market, both because their production foresees a rigid
selection of clusters and grapes, both because the final price inevitably
results elevated. But their production remains a patrimony to defend and to
jealously guard, so tied up to the territory, to its history and the wise the
man's job.
